I am looking forward to CS3 for this and many other reasons. :)

Here is a B&W conversion I just did the old fashioned channel mixer way 
using CS2. I did a bit of split toning and tinting after the B&W 
adjustment. Stitching was done with Autopano Pro (7 vertical frames from 
Canon 5D with Oly 21mm f/2 lens), and HDR processing with Photomatix (3 
frames @ +/- 2 EV).
