I find I'm rarely happy desaturating. I used to fiddle with the color curves
(RGB)  quite a bit to get something I liked, but I discovered

a PS plugin called "BW Conversion Pro". It also has nice sepia options.

 

Generally I'm running Photomatix HDR in batch mode, loading the HDR image
into Photoshop and running the

Tone Mapping plugin, then using BW Conversion Pro, finishing up with
sharpening (sometimes).

 

Here's one I did with the above workflow including sepia:
