Hello Tom,

I'm certainly not able to find the perfect camera for your needs, but some considerations:

Currently i am not aware of any camera that can do real HDR bracketing (more than +-2 EV).
So, especially when you plan to shoot indoor, you might consider thethered shooting to circumvent in-camera bracketing limitations. Although, there is not much software for wide bracketing ranges available at the moment, this will certainly/hopefully be adressed in the future. Selecting a camera that supports the USB PTP protocol should put you on the secure side.
Above is for general use with any camera. Alternatively, there are some more knowing Canon users that can tell more about software for Canon cameras (if i remember correctly, there is some special software available)
